Natasha’s Law & Labelling
Natasha’s Law, which came into effect on the 1st October 2021, is a safeguarding measure to protect allergy sufferers and give them confidence in the food they buy. This critical legislation requires schools to provide complete ingredient lists and allergen labelling on food pre-packaged for direct sale (PPDS) on school premises.
Nutmeg makes allergy identification and labelling a seamless process. Allergen information is easily identified for all school menus and makes crucial information available to caterers, parents and pupils. Compliant PPDS labels are generated at the click of the button and updated in real-time through our recipe analysis feature.
Nutmeg’s intuitive recipe analysis function is inclusive of special dietary requirements and uses the latest McCance and Widdowson Composition of Foods database. Recipe data is stored in the database, and new recipes can be analysed and added to the food directory - recipe data includes both raw ingredient weight and finished dish weight, and Nutmeg can estimate nutrient losses through cooking.
Up to 14 macronutrients and micronutrients are analysed, as well as overall energy, and all menu analysis is in relation to standards for your specific population group. The causes of any nutritional imbalances in the menu are highlighted, and our colour-coded nutritional analysis shows the percentage by which nutrients exceed or fall short of the standards.
Cycles of menus up to 8 weeks can be saved and analysed for cost, nutrient content and frequency of dishes, a spreadsheet is provided to import suppliers’ and manufacturers’ data to the ingredient database. Reports produced to evidence the nutritional analysis of menus in comparison to guidelines can be produced by dish, day, or week.
A detailed analysis of the cost and nutritional breakdown of each item in the menu can be easily produced in an Excel spreadsheet - Additionally, the cost of a basket of ingredients can be recorded, allowing users to demonstrate trends in the ingredient cost base of their menu over time. Full cost analysis of daily and weekly menus are automatically reported.
